Had hens for ten years or so. They free range but get locked up to protect the garden, running over hill and dale when loose. The other day we found some eggs that had been hidden away. These were between 2-6 days old and we had not had frost during this period.
When we went to use these eggs i had the feeling that the yolk was much darker than normal. We normally collect the eggs and get them into the fridge within a few hours with our customers still being impressed with the dark yolk colour compared to store bought.
I'm wondering if the days at room temperature might have darkened the yolks?
