You guys were so right!

When I make omelettes or scrambled eggs, I put them in my Bullet blender (the kind that has the cup you screw the blade unit on and turn upside down on the base) hit the button for a few seconds and you have the lightest, fluffiest eggs! No need to add milk or cream. You can make a huge omelette with only 2 eggs instead of 3.
It took me a while to get used to the dark colored yolks too, but once you get past that, you will never want "assembly line" eggs again!
