Zucchini Chocolate Chip Cookies

This recipe is from the animalvegetablemiracle.com site and makes delicious moist cookies! You'd never know it was made with squash!

ZUCCHINI CHOCOLATE CHIP COOKIES
(Makes about two dozen)
1 egg, beaten
½ cup butter, softened
½ cup brown sugar
1/3 cup honey
1 tbsp. vanilla extract
Combine in large bowl.
1 cup white flour
1 cup whole wheat flour
½ tsp baking soda
¼ tsp salt
¼ tsp cinnamon
¼ tsp nutmeg
Combine in a separate, small bowl and blend into liquid mixture
1 cup finely shredded zucchini
12 oz chocolate chips
Stir these into other ingredients, mix well. Drop by spoonful onto greased baking sheet, and flatten with the back of a spoon. Bake at 350°, 10 to 15 minutes.
 
Sure sounds yummy. And, we can say they are "healthy" with the whole wheat flour, honey, zucchini......

My wonderful husband shredded a huge bowl full of zucchini yesterday. My mistake I didn't tell him to take out the seeds and only shred flesh. Think these cookies will be OK with seeds?

If you had really large seeds, you may just want to take them out which shouldn't be that hard since it only calls for a cup. Also, when you first mix up the batter, it seems really stiff (I used my stand mixer to mix it all) but it is amazing just how moist the cookies are when they cool! I have also frozen some of what I made so I hope they freeze well! Good luck!

Thanks for the information - hate to discourage husband from helping. He is such a sweetheart and helps anyway he can since I work full time and he works only 3 months out of the year and the rest of the time on the ranch. I want to get home and make these. I hope they freeze well also. Would love to make ahead and have for Christmas baskets to family and friends.
