Was the bread a bit closer to the top element?

The amount of sugar in a recipe will make the bread brown more. The process of converting flour to co2 also converts some of it to sugar. The longer bread rises, the more sugar it will have in it from the conversion

sandwich bread tends to have more sugar added in the recipe and then it is baked in a tin at a lower temperature. French bread often have no sugar and are baked at higher temps often without a tin.

The less sugar allows browning but not burning at the higher temp and changes the crumb inside the bread
