Don't breed to the light colored one. Kill her.
Use the Zook birds and that dark one from Sandhills (that's out of my stuff).
The one with the white in the wing will give you the right colored males.
This male is the wrong color. I get them that way too. You can use him, but be aware you need to breed away from his coloration.
He looks small to me, but that could be the camera angle. Top down pictures make it difficult to tell anything about a bird except the coloration.

Thanks for the feedback. It was overcast when I took the picture but you're right that his color is not as light as it should be.

That one shades more like they should be. Take a few more pictures of the bird from different angles and tell us about his breeding. I do see the multiple spurs, but no red streak on the leg. What is his weight as well?

Coming from Texas it could be from any number of lines. Though it doesn't look like a Brush bird.
