eat immediately?

You could freeze them right away but be sure to lable them appropriatly and then let them age for several days after you defrost them. So, if you want to eat a chicken on Sunday, you probably have to take it out of the freezer and put it in the refridgerator on Thursday or Friday, that gives it a day to defrost and another day or better yet, two to "rest" before you cook it on Sunday. It shoujld accomplish the same thing. Personally, I prefer letting it rest before I freeze it becasuse I don't usually plan ahead that far.
