Yesterday, we had mean roo soup! I hade the egg noodles for it too, deeee-lish! Finished it off with homemade potato cake. And today we are having yam and apple pork chops. mMMMM, then tomorrow home grown lamb stew. An excellent menu here!
it was a recipie I found on Allrecipies.com. It was submitted by a fellow Idahoan, Idaho Potato Cake. It is a super-moist cake make with mashed potatoes. It is soooo good. Here is link to the page/site. http://allrecipes.com/Recipe/Idaho-Potato-Cake/Detail.aspx
I have been making lots of homemade soups with homemade noodles lately (technically it's winter in Phoenix even if the high is 70 degrees
)
I don't like those thin noodles you buy dried from the grocery store...I like thick chewy noodles!
Today I made beef noodle soup with a London Broil (Safeway - $1.77 a pound!). DH got a rutabaga (he buys random vegetables
), which I made him peel and cut up, and we added that along with the carrots, celery and potato. The rutabaga was actually a good addition...kind of a cross between a potato and a carrot...not as sweet as a parsnip, which is also good.
We'll eat beef soup for at least a couple of days. When I cook, I cook so we have lots of leftovers!
