I make thai food quite a bit and love the peanut sauce. I like to make mine spicy, sprinkle my dish with extra cilantro, and drizzle of lemon or lime juice and dig in.
I made this last night & it was just great. far better than my standard peanut sauce recipe. My family requested that it go in the favorites cookbook.
I made a couple of changes - I omitted the milk & doubled the coconut milk to keep it dairy free. I doubled the peanut butter because I didn't have peanuts at home. & I added chopped cilantro. I also used whole wheat linguini for the pasta.
I served it on a bed of fresh spinach & mung bean sprouts with a sliced chicken breast on top. - my husband is a BIG eater.
