I was informed today by the nice lady at the WSDA (Washington State Dept. of Agriculture) that if I do decide to sell eggs at the Farmers Market I would be subject to surprise inspections. Thankfully there would be no charge! Of course this is after I pay $45 to get fully licensed. I could sell eggs from the farm without licenses/inspections, but we are in the middle of nowhere.
