Bread And Butter Pudding

    1 cup raisins
    1/2 c. brown sugar
    1/2 c. shredded coconut
    2 eggs
    2 c. milk or half and half
    rum to cover
    several bread slices, buttered and cut into
    small triangles

    Cooking Instructions

    Soak raisins in rum several hours or overnight. Preheat oven to 375°. Butter a 2 quart casserole. Beat eggs and milk together. Sprinkle some raisins on the bottom. Layer bread over raisins. Pour some milk mixture over each layer. Repeat until casserole is full. If you have any milk left, pour it all on. Allow to soak in. Mix together the brown sugar and coconut and sprinkle on top. Bake at 375° until set. This could be from 30 to 60 minutes depending on how much you made.
