Carrot Coconut Bread

    3 fresh eggs from your favorite flock
    1/2 c. cooking oil
    2 c. grated carrots
    2 c. coconut
    1 c. walnuts
    1 c. raisins
    1 c. sugar
    2 c. flour
    1 tsp. vanilla
    1 tsp. baking powder
    1 tsp. baking soda
    1 tsp. cinnamon
    1/2 tsp. salt

    Cooking Instructions

    heat oven to 350°. Cream oil, eggs, sugar, add grated carrots, coconut, nuts, raisins, vanilla. Add dry ingredients, DO NOT double recipe, will NOT turn out. Pour into a greased or wax paper lined bread pan. Bake one hour, let sit 15 minutes, turn out of pan and slice when cold.
