Curried Chicken Broccoli

    3 cups chopped, cooked chicken
    2 to 3 cups broccoli florets
    1 (10 3/4-oz.) can cream of chicken soup, undiluted
    1/2 cup mayonnaise
    2 tbsp sour cream or non-fat yogurt 2 tsp. lemon juice
    1 1/2 tsp. Indian or yellow curry
    1/2 tsp. Adadaba (optional)
    3/4 cup grated cheddar cheese
    3 cups hot, cooked rice

    Cooking Instructions

    Lightly grease a 2 quart glass baking dish. Microwave broccoli just until tender crisp. Drain; arrange cooked broccoli and chopped chicken over bottom of baking dish. In separate bowl, mix together cream of chicken soup, mayo, sour cream, lemon juice and curry/spices. Pour the sauce over the chicken & broccoli and sprinkle grated cheese on top. Bake uncovered at 350° for 20 minutes, or until hot and bubbling. Serve over hot, cooked rice.
