The breed you are describing in your info is an Onigadori, NOT a Phoenix. (Your links and photos don't work, but the link names even say Onigadori.) Please do not misrepresent the Onigadori! You are most certainly raising Phoenix.
The Onigadori is a Japanese treasure who's tail feathers do not molt and can reach 10 meters. It is very difficult to raise outside of the Japanese climate. If you can even get a bird out of the country.
The Phoenix is a hybrid of the Onigadori, intended to harden the breed to survive outside of Japan. Their tail feathers DO molt, resulting in lengths of 1-2 meters. Magestic for sure, but nowhere near the glorious Onigadori.
