I start with quartered up red potatoes and 6 eggs. Put them all in the same pot and boil until they are done. I do pull the eggs out after about 10 mins.
I do not measure anything.
This is a list of what I use:
Cayenne, Black and White pepper
While the potatoes are cooking I cut up these things:
I dump the potatoes out to cool and sprinkle all the spices on them.
After they are cooled I add the cut up stuff and some mayo and mustard.
I mixed that ^ a little by hand then add the chopped up eggs on top and mix a little bit more, by hand of course. It helps to break the potatoes up a little bit, but don't mix too much...you don't want super mashed up potatoes.
Sprinkle some more cayenne pepper on top and then throw it in the fridge to finish cooling while you start cutting up the "stuff" for the gumbo.
