Anyone have a good fudge recipe

I'm looking for a good smooooth fudge, not the fantasy fudge on the back of the marshmallow creme jar. It's the holidays, gotta impress the new neighbors with good fudge if I'm going to have this "unexpected" rooster.

This is a quick fudge. It is very good, too. It also takes the hard part out of judging when fudge is just right.

Quick Pecan Fudge

2 tbsp butter (not margarine)
3 cups chocolate chips
1 12oz can sweetened condensed milk
1 tbsp vanilla
3/4 cup chopped pecans

Use 1 tbsp of butter and grease a 12x9 cake pan.

Over medium heat melt 1tbsp of butter. Add the chocolate chips, sweetened condensed milk and vanilla. Stir constantly until the chocolate is melted and everything is mixed well.

Add the chopped pecans and mix well.

Pour the mixture into the greased cake pan spreading evenly.

Cover and refrigerate for 2 hours.

Cut into 24 bite sized squares and store in an air tight container.

You can leave out the nuts if you want. You can also use walnuts.

This is the recipe my mom always made for us kids growing up...Takes alittle time but its worth it...

2 cups sugar 1/4 cup cocoa
1/8 t. cream of tartar 2/3 cup of whole milk or
evaporated canned milk
2 T. Butter 1t. vanilla

Mix sugar and cocoa together in saucepan...Add cream of tartar and milk..stir
Cook sugar mixture slowly, stirring until sugar dissolves...
Cover syrup mixture and cook 2 minutes...Uncover and cook until soft ball stage forms in icy-cold water cup..Remove from heat..
Add butter to fudge syrup: do not stir...Cool to lukewarm..
Add vanilla and beat fudge until creamy (shiny appearance disappears and shape is held when dropped from the spoon)
Pour fudge into shallow 8-inch pan or plate thats been buttered..mark of squares when almost cool..
 
Tuffoldhen, thank you for that recipe. It looks good as well, I've never seen a fudge recipe with cream of tartar in it. Other than snickerdoodles I don't think I've used this old can of cream of tartar for anything. It's actually probably time to replace it.

This fudge recipe is one of my favorite memories of my mom and her sitting there beating this candy for us kids are Christmas...yup...time to get a new can of tartar

MissPrissy, I am going to try your fudge recipe today. We are supposed to get snow Monday and as far as I'm concerned, that is fudge weather! I used to make a nice cooked fudge, but at this stage of my life, it's just too tiring, so I've given up making it. I think it will be fun to make fudge again! Thank you for the recipe!
