The problem with corn oil is that all the oil on the market is from GMO corn. We stay away from everything GMO - canola included. I use olive oil - pure 100% Italian olive oil that has met the rigorous standards and is not dilute with cheap oil.
 
I made a big batch of potato salad today, so I also had to make some mayo. I still can't believe how fast, how good, and how CHEAP this is. I use safflower oil, which makes the best tasting, to me. I add salt, pepper, pinch of sugar, garlic powder, rosemary, thyme, and parsley. Unbelieveable how good and cheap it is. It almost makes me mad how much Ive spent on mayo in the past, when I figure out the cost, and health benefits (no preservatives, MSG), of homemade mayo.

I still have disasters..had to make it twice today, because I added the oil too fast, but second time was the charm.

I enjoy getting to pick my oil. I do not feel so guilty over olive oil mayo.
I also tweek it for different salads or meats for sanwiches.
I made some with garlic that my neighbor loved... but made my eyes water. I ended up using it to baste a roast with.
(you make some winners and you make some duds. such is life,... and mayo)
 
made it..PERFECTLLY first time! LOVE IT...

was really expecting a diff. taste tho..mnore like store bought...this was way diff. IMO....

next time i'll add garlic etc...but for today; plain mayo...due to the fact I have oodles of eggs and no one buying
cause they are "brown"...lol...and egg salad!
 
Will be making this recipe with olive oil as soon as my eggs get to room temp. Maybe a couple of hours. I am planning on using my KitchenAid mixer in hopes that it will work beings I do no have a blender or hand held mixer. WIll report back asap.
