    They have yellow legs so they are Barred Rocks (plus Marans have slightly different barring pattern). It is a pullet. Barred birds the females are darker than the males.

    I know right now it Texas you have to jump through hoops to ship adult birds. You probably need a special permit to ship to them.

    Room temperature can effect the incubator to some degree, but not a lot unless its really cold or really hot. It looks like from the temps you posted that the incubator should be just fine.

    Looks like a small blood spot. Totally normal.

    I read once you can use them for baking (I never would). So I would think with them hard boiled they should be fine.
