Not really scratch but I feed a few cups of fermented peas every morning.
I keep it in a plastic coffee can by the coop. Just add peas, water and a tablespoon of unpasteurized vinegar with mothers.
Keeps 'em busy and out of the way while doing chores in the morning.

They should be eating well on their own and fully feathered (no baby fuzz). 6-7 weeks until ready for new homes.
All you need to do is provide mom and dad with food and clean water. If you have any young die, it is likely that you have creepy crawlys (mites).

Hmmm, not sure what they are. There are some large homers. That would be interesting, if that's what they are. When mix and matching breeds, there's no guarantee that you won't end up with all the traits you're not looking for.

Sorry, I don't mean to be so negative. Most of us that have experience hand feeding babies were put in the position of choosing to hand feed or cull. From now on, I will cull every time.
You on the other hand are going out of your way to create this problem by hatching viable eggs from ferals.
The birds at the meat market are probably King pigeons. Kings can fly but they are kind of lazy and would rather not fly very far.
I'm not sure what your trying to accomplish here. If you're raising for squab, they should be slaughtered before they are flying around in peril of hawks...
