First time raising Cornish crosses and my middle DD ( my partner in this project ) and I decided we’d process a few as Game Hens last Thursday. It went fairly well over all, we hand plucked them. I’ve had them resting in the fridge, now in a brine and putting them on the rotisserie tonight.
