You don't. It dries out. I can walk barefoot in my coop and not get poop on me.
As the pellets absorb the poop and dry it out, they start breaking down to sawdust. In about a year in our one coop, they get about 80% sawdust and then we haul it out in a wheelbarrow, dump some in the garden...

Like I said, some take time, as in several weeks or even a month or two in some cases. It depends on how old. The ones that are 5-6 months old may spend one night on the floor, but by the next will usually climb the ramp and go right up.
I think I put what we do somewhere in this thread already, but in case I didn't, we have horribly high humidity here, and here's how we beat it.
First, adding ventilation doesn't help because now you're bringing in that 90% humidity into your coop. Mold will start growing, and the chickens...

I don't know your setup, but they make garden netting or bird netting that's relatively cheap, that perhaps you could put up to keep that hawk(s) from returning. Most of the time they'll come back if they see an opportunity.
