I think poultry shows are one of the last places you would get disease. Breeders only show their best. Anything is possible though.
Historically these birds are very close to jungle fowl. They can and do love to fly. Males can be extremely aggressive towards other Sumatra Males (they were bread for cock fighting and have multiple spurs).

On a dig note. We went to the county fair today and saw 3 Sumatras. Both the girls had vertical tails. The roo set my 9 year old Sumatra lover off. See pic below
