Try getting a flock block. This seems to provide nourishment as well as an outlet for their pecking instinct. Our hens all look much better since we've been putting flock blocks in the coop. We found ours at Tractor Supply.

You identified your problem - room temperature. I lent my incubator to my son's teacher last year and he had similar problems. You MUST keep the incubator in a room where the temperature doesn't vary too much and definitely cannot go below 60 overnight/weekends.

I haven't hatched geese yet but from doing a search on "internal pip goose" it looks like it can take up to a couple of days from internal pip to being out. You may want to search the old threads and see what you can find.
