I buy the cheapest white bread I can find and use it to soak up the grease, then put that in my suet holders for the birds. I do that with all meats; bacon, sausage, ground beef, etc. Works out well for everyone. We don't consume it, it doesn't go in the trash, and the birds love it.
Not sure if this is your question, but if you are canning pickled beets, you can use the boiling water method. Otherwise, if you are canning just plain beets, you need a pressure canner.

Regarding the lettuce, what is wrong with it? A planting of lettuce is only good for about 3 weeks and then it turns bitter and starts to bolt. Also, hot weather will hasten that along. Is bitterness your problem?
