Do I have to let my freshly butchered rooster sit in the fridge 24hrs if I plan on just making a soup out of him? I know you should if your oven roasting, but would there be any difference if I boiled the meat. Wont it be tender either way?

He died killed by his roommates. My kids really took a liking to the lil guy and made him a cross and buried it in the backyard with flowers and the whole works. He had a short life but a good one.
