Birdbrain's Better Bator
Okay, I realize that is a bit presumptuous, but it rhymed, so I went with it. After all, having a homemade bator is "better" than having none at all.
About a year ago we ordered some beef from a grass-fed beef outfit in Amarillo, TX. When the order came, we were...
I cooked it until the breasts were at 130 degrees. I cut the whole breast sections off and returned the bird to the oven to finish the thighs and legs. Then I pan seared the breasts with skin side down to finish the skin but did not cook it on the other side. I sliced the breasts on an angle and...
After raising this bird all summer, then eagerly anticipating Christmas dinner and being a slave in the kitchen for hours my goose got No rave reviews. It was not greasy, over cooked or dry. I thought it tasted good, but the four other members of my family thought I should stick with raising...
Dusky,
I think you are wrong about assuming the you will get smaller geese from Holderreads. I ordered 6 of the fancy goose package. What he sent me were 2 giant Embdens, 2 Buff Africans, 3 Americans and 1 Tufted Roman. Yes, you counted right. That was 4 of the largest breeds, 3 medium and 1...

As long as they have a safe dry protected place to go they will be fine. It has been -11 F here lately and my geese are fine. They aren't fond of the snow though.
No, I'm full up. I have 4 Muscovies, 4 Welsh Harlequins, 3 geese, and about 24 chickens. I'm wishing that I could pare the flock down some more, but we have customers that pay well for fresh eggs. It just about covers their feed.
We drove through Chickaloon this summer. It looked like the...
