The way our work schedules are the only day we could process before Christmas would be 7 days prior. Is it okay for the turkey (heritage breed) to rest in the refrigerator for 7 days, or is that too long? What container should it be stored in? Airtight bag? In water?

The coop is in a 3 sided shedrow barn, and has wind break baseboards on the mesh walls.

Our Muscovy is a really good flier... I saw her fly from the barn yard up high and across a 4 acre field to land on a 2 story house quite far away.
