I've hatched out two batches of coturnix under a bantam hen. I marked my calendar, waited for the hatch day, then removed them as they popped out. Of those that hatched, (11 out of 15 & 10 out of 15) I've not lost any to disease, and that was over a year ago.
I've used rabbit water bottles, auto waters, and now the ones Kullas mentioned. I'll not use anything else now, these offer a nice catch basin below, as well as the auto watering feature I love, as I'm a fan of automation.
They are a bit involved to get set up, but WELL worth it, IMHO.

I hatched out two batches of chicks under my silky bantam (feather footed, in fact). I just made sure to pull them out as they hatched and put them into a brooder. I was hatching some in an incubator at the time, and couldn't tell them apart once I had them all in the brooder.
