I would highly suggest not to feed your birds clams even if they are cooked. It is best to feed chickens food that they are familiar with such as bugs and veggies. lams are very foreign to chickens and could make them very sick.
In my experience the best way to get rid of the rats/mice is to make sure that there is no holes in the coop. Also, I have found that mice can fit though chicken wire, so it is best to use hardware cloth.

I really like Dominique bantams for showmanship and starter birds they are easy to keep clean and are not that flighty like old english. The problem with crested breeds are that they can not see when walked during showmanship and are hard to keep clean.
I don't think this should be a problem as long as the place were she sleeps is dry. I have a partridge rock and sometimes she sleeps on the ground too. I think some chickens just don't have an instinct to sleep off the ground.
