I don't remember quite where I read it, but the amount of salt in their diet may have something to do with it. You mentioned that it was cold enough for the egg remnants to freeze--if your chickens aren't feeling well, bronchitis has also been linked to lower egg production and thin/shell-less...

Sorry for your the loss of Ms. Clucks, it's always painful to lose one when you know them that well. In regards to the posts of this thread, however, possums and opossums are not the same thing, and what attacked the chickens is an opossum. This is also a lot of unnecessary hatred for opossums...
