Thank you all for your help. She passed away last night.
We will be sending her off for Necropsy to see what caused this. Everyone is devastated - couldn't have happened to a sweeter chook. I will share what we find as this was an awful 5 weeks - we tried so hard, and so did she.

I used zip ties, ran it around the zip tied ever 6-12” on top and bottom and then here and there in the middle. Has worked great - the run is now my backup for sick chickens or new chicks.

No way was this a hawk. They defeather your chickens, eat a few organs, and leave a huge carcass. It could be a hawk plus racoon, or hawk plus fox. But a hawk leaves its kill, a 4 lb bird cannot fly away with a 4 lb chicken. I doubt the cat. They wont eat a whole chicken. My vote is raccoon...
