I have my brooder running all the time. Usually, I move the ones in the bedroom out to the shop brooders the day before hatch day. Then I clean it and set it up for hatch day. Until I am done hatching for the year the bedroom brooder and the shop brooders are always up and running.
Most of my eggs hatching are using shipped eggs. This is what I do.

I usually candle between 7 and 10 days and then at lockdown. I missed the 7 to 10 check with some of the eggs as the husband was home at the time and I didn't have the time to do more than put some into lockdown.
I have some of my own chicken eggs in the bator. I also have chicken, quail, turkey and duck eggs that were shipped and look to be doing well. My next date to check eggs is the 22nd so I will see what I get from them.
I use two Hovabators for hatching. What I have found is when I go to lockdown I put a flour sack towel on the bottom under the eggs and sticking a corner out and into a container of water. It wicks the moisture into the bator and I can check the bowl once or twice a day
