Chicks should not eat layer feed. It has too much calcium (often 4%) and *can* (doesn't mean will) cause kidney failure or gout, as well as stunting development and possibly delaying onset of lay. Layer is also usually 16% protein which simply isn't enough for growing chicks. Usually around 22%...

Color faults to me would be white legs, wrong eye color, or lack of flowering. Beyond that, as far as I know.. anything else goes. Yellow legs are preferred but pink or pink with mottling is accepted.

Start by running a dry hatch for SFH. When picking your breeders, if you are indeed breeding... try and keep a crested female instead of male (if you even like crested). But don't keep crested in both genders as you will get double crested birds and is not good...

Broodyness is definitely hormonal. But if you have a rooster in with your hens, I would expect most of your eggs to be fertilized. :confused:
Scratch grains and other "treats" like watermelon and such can diminish your protein level too far, especially since layer is only 16% which is the minimum suggested for light breeds like leghorn... and maybe your calcium level if you don't offer OS on the side. Scratch grains is often 8%...
