You can always start small, focus on just a handful of breeds, and sell online! I would say to make sure you have a solid and successful business plan before buying a larger piece of land.

This might be coming a little late but I have ameraucana hatching eggs available if you're still looking! My rooster is lavendar and my hens are blue and splash so resulting chicks will be black or blue (split to lav).

You might try craigslist. There's someone in tualatin with bresse chicks that they hatched themselves. I'm sure they have eggs available if you ask.
