That sounds about ok to me. I find its more about "feel" than anything else. I follow no real recipe, just "wing it" and so far more successes than failures.

Actually its pretty much the same with all my wine. fruit, sugar, yeast and time.
With jalapeno I would use about a pint of peppers give or take depending on preference. add some fruit to give it some body. Whatever you have access to at the time, strawberry, apple, cherry...

strawberry -never fails to turn out good
rose petal -the best ever
blackberry -very high alcohol content
apple strawberry -awesome
cherry -awesome
blueberry -so-so in my opinion...

I have made many different kinds of wine. I learned the basics from my granddad. Some of my best batches have been "Rose Petal" made from my grandmothers rose arbor. and "tomato" belive it or not its a very sweet golden wine.
