too many eggs? - freeze some

Last year I did freeze about 3-4 dozen eggs -- and decided since they were a year old it was time to use them up. They worked just fine. I didn't follow this method, I used muffin tins not icecube trays. Then transferred to plastic baggies when they were set. Didn't know the 'add salt trick'. Will do that next time.

If you are overflowing with eggs-- they will keep a year in the freezer....

Yes, thanks for reminding me. I must do this. I'm giving away eggs now but I just know this winter I would love to open my freezer and have some eggs to thaw out.
 
Thank you ChicKat! My pullets have just started laying, but I have 14, so I know this will be something I will use! On the other hand, I sure had a lot of friends show up to give egg cartons for me to fill.

It does work well...... just takes a little planning. Next time I do it -- I'm wondering if I will use some cupcake paper liners -- because it is a bit tricky to get out the frozen eggs from the muffin tins. Then there would be the nuisance of peeling those off. LOL/ Seems lke after a year in the fridge -- a little extra moisture helped.

I bet you will have happy friends, happy pullets, and plenty of eggs too -- Eggs are such a perfect gift IMO. I'm the same way -- how to balance the distribution -- and now everyone is going in to molt here -- so the egg spigot is about to be turned off. LOL
 
I did this earlier this year when I had way more eggs than my customers and I could use......
......came in handy now after culling and before all new pullets are laying (shoulda waited to cull, oh well).

Had scrambled them, no salt, and put in gladware, 2 eggs per container.
Thawed in microwave, they cooked up just fine.
Different texture, both thawed and cooked, than freshly cooked scrambled eggs but not in a bad way.
Wish I had frozen more and removed from gladware containers into plastic bags.

Good first experience, will try some changes next time.
 
I just remembered I had these old Gladware storage tubs sitting idly in my garage for the last ten years. I'm happy to say that two of them now have four eggs scrambled into each one and are on my freezer shelf. I'm kicking myself for not having done this earlier, I would have had enough eggs to get me through most of the winter.
The down side is I now have to break the bad news to my neighbors... no more eggs for you. Nothing personal mind you, I just want them all for myself.
