Apparently you have not seen the recent recalls for flour that has been contaminated by e. coli. This wasn't a problem years ago but contamination of food products is an ongoing thing today.

If the flour you are using is contaminated, the taste test is all it will take for you to become infected.

All that said, at my age, I don't worry about such things. I still eat raw pie dough.
