I think curing is only beneficial for storage purposes in regards to the standard (non sweet) potato.
You all are crazy for removing the skins! I love the skins on those tiny taters!
Personally I find the skins on the blue (purple) potatoes to be bitter.

The yellow ones are supposed to be Cornish Rocks. The gray one is supposed to be a Wyandotte pullet, the sign listed a whole bunch of colors. I am hoping it is a blue or lavender. The stripey one was in the bin with the Cornish Rocks and Rhode Island Reds.
 
I love smashed potatoes. Bake or nuke a potato. Smash it slightly with the heel of your hand or a spatula, just once or twice, enough to break the skin in a few places but still keep it's general shape. Pan fry in a mix of olive oil and butter until crispy on both sides. Serve with a bit of salt, butter, and grated cheese etc.:drool
