I make breakfast salads all the time with tiny sunny side up eggs. Soooo good!
I haven’t pickled them but I’ve been wanting to try. I’ll have to pick up some pickling spice!
Do it! I wanna see a little jar full of tiny pickled quail eggs. I just love egg sandwiches. I can't wait to try bitty little quail eggs on an English muffin.

No pickling spices needed. Boil equal parts water, vinegar and sugar and then add the peeled hard boiled eggs to a jar, cover with the boiled liquid and seal. Let set for a couple of days in the refrigerator. I prefer to do mine by adding the eggs to already pickled beets (makes the eggs red on the outside).
