It's a great idea and I actually made it this way....with the Mexican beans added in...once. I'll make it again but at my mom's house so she can poop her pants.

And...I'm not even sure if the meats in it are real but I want you to try the idea.

Not the way we make it. I totally get it. Gumbo was a "clean out the kitchen" soup. Throw whatever you have in the pot and be happy you are eating type affair. It would throw off the texture. We eat Hoppin' John, soup, and pinto beans over cornbread. I'm not opposed to dropping beans in gumbo, but I usually use a whole chicken and 2 pounds of Rabideaux's sausage (pork or venison & pork or mixed. Don't care for the all beef.) and a dozen eggs so there isn't a lot of room left in the pot. No Okra. Ever since they taught me to eat chili with crackers (where are the Fritos?), I like fresh homemade bread slathered in butter with my gumbo. Just half a loaf. But I will hurt myself with a whole loaf, 1/4 lb of butter and a full pot of gumbo on the weekend. :drool:drool:drool:drool:drool:drool:drool

@adrikeen start making stir fry. Super simple, quick and healthy. Hard to mess up and tastier than store pizza. I should make homemade pizza this weekend... We have enough basil in the garden to make pizza. Fresh basil :drool
 
I don’t cook much. It’s just me so making a meal isn’t worth it unless it’s something I really want. If that’s the case I go to the store for what I need.

Mom ALWAYS had a pot of beans on the stove. Nibbled all week. Restarted when the pot was empty. Cooking for one for the week is as easy as cooking one meal a week. Salads are easy dressed with rotisserie chicken. Also used for stir fry. I eat a bit of chips and salsa as a meal. Humus and chips. Peas & cornbread. Quick & easy. I do weekend cooking and pack meals to work.

I wait until the kids around for the pizza & bread. That way I don't eat the whole thing.

That’s basically what I do. It has to be something I want to eat for days on end. Unless it will freeze well. Other then that I eat lots of salads or smaller snack type foods.

Husband and I do the same. We’ll cook enough for 2-3 nights and try our best to eat healthy frozen or quick food inbetween. Cooking takes a long time and a lot of effort.
