Carrots can be pulled and used anytime that they are big enough to suit you. They can also be left in the ground as long as the ground does not freeze. They do need to be pulled before the ground freezes but frosts will not harm them. If you leave them in the ground over winter they will develop hard cores and go to seed the next year.

Carrots are funny, normally you pull when still fully busy greens, trouble with them is the seeds are so tiny they are normally crowded and don't get very big, if crowded, selectively pull to give others room, and keep watering, I have left mine to keep growing until first frost, keeping them in ground till ready to eat or store actually is the best storage solution, and my chickens love the green tops, noticing goes to waste
 
I have a potato plant growing from a green potato I threw in the compost pile :lau

I heard when it dies is when you harvest but never heard of leaving it in that's a great idea.

I meant to bury mine in more compost so it grows more roots and more potatoes but I never did that and now it's too late I think so I'm just going to wait and see what I get.

I also have some potatoes in the cabinet that I've been waiting to sprout or something but it's been like a month or two so idk
