4" Mora. Carbon steel. Holds an edge and easy to sharpen. Cheap enough to get a dozen and sharpen after the event.

Also have the replaceable edge razor knives if you don't like sharpening. If you are any bit unsure, get a pair of cut proof gloves. $10 and cheaper than an ER visit. Leather gloves are NOT cut proof, cut resistant or anything but cut-able.
 
I used to use standard size EDC knives that lock when you flip them out, but I recently switched to a folding boxcutter, and I have to say, I really like it. I don't have to worry about sharpening the blades correctly or being careful to not chip or break them. Replacement blades are cheap. Plus, if you send it through the washer, it doesn't get ruined. (Want to wager a guess as to how my last knife got ruined?) Works well for butchering, wood carving, and anything in between.

Right. Smother them to near unconsciousness, then as they are gasping for air, take the picture before they try to escape. That explains the look of surprise that is so precious.

Lots of light to blind them and a fast shutter speed. You are so smart! I shall try this. Need to find that light box now.
