Veggie soup is easy. Cut up your veggies. Coat the bottom of your pot with a bit of cooking spray, sautee the onion and some garlic. Add celery, sautee until soft. Add water, salt, pepper, herbs, a can or two of tomato juice. Add rest of veggies except for soft stuff like zucchini and cabbage. Bring to a boil. Lower heat, simmer for half an hour or so, then add your soft veggies. Simmer for another half hour or more until the veggies are done.That looks good! I probably should have just cooked mine without the PB and eaten them that way cause they would have been so good I think![]()
