What do we mean by 'blood red'?
Depends whether it's going or coming from the heart.

This is so cool! How much water is in there? Did you trim the bottom at all?

Just enough water to cover the bottom of the celery. It can be added before or after you put the celery in. I don't trim the bottom but do trim the tops from time to time. Putting a bag loosely over the top helps prevent the water from drying out.

Just red.
And mammalian blood (as far as I can tell) is always red -- it's just that the oxidized blood is a brighter hue than the CO2-carrying blood.
