Salt, pepper, garlic powder, onion powder, cayenne for boils, Tony's, crab boil (particulate) parsley, thats about all I use.
If you can master a good dark roux not much seasoning is needed really. But I mostly make pot fulls of stuff i/we can eat on for a few days. I dont really do 1 day meals. Just how I was brought up

Yes, make a good roux. The celery/onions/bell pepper is the seasoning. Chowchow on the side.
 
Nah just my wife and I. I have a daughter but she doesn't live with us. Sis will stop by and get a container of whatever is available
There were 4 of us kids growing up so I learned to cook that way. We had 4 kids. Now they've left and I'm getting meals for all week where they once lasted all day.

Rotisserie chicken last week.
Black-eyed peas and tamales this week.
Rice 'n gravy next weekend.
Life is good.

Good advice. I gave all of my mother's rosebushes to the neighbour. (Unintentionally*) They have no idea that they were my mother's roses since people have moved in and out of that house a lot.

*I trimmed and uprooted them all off of my property and they cropped up on the neighbour's side. I keep my side free of them.
