If you can master a good dark roux not much seasoning is needed really. But I mostly make pot fulls of stuff i/we can eat on for a few days. I dont really do 1 day meals. Just how I was brought up

Yes, make a good roux. The celery/onions/bell pepper is the seasoning. Chowchow on the side.

Good advice. I gave all of my mother's rosebushes to the neighbour. (Unintentionally*) They have no idea that they were my mother's roses since people have moved in and out of that house a lot.Don't hug rose bushes.
