Don't know what your problem with cucumbers is but eggplant may have to do with the variety of eggplant that you have tried.

Black Beauty eggplant is probably the most common grown eggplant. If you don't give it the "salt treatment" it is bitter. Nadia eggplant does not have that bitter taste even without the "salt treatment".

Texture is a little off but other than that it is very much like zucchini.
