I decided to use a rubbermaid for a nest box, but only one will fit on the shelf I put up!

Will one be ok for 3 chickens, or should do something else?

I have 18 chickens and 5 nest boxes, to my eyes, 5 identical nest boxes, but my hens have decided that only the two on the far right are worthy of holding their eggs. They all line up and growl and remove each other feathers for a turn on the correct nest boxes! So, it doesn't seem to matter how many nests they have. They'll choose one or two special ones and that'll be all they see. Funny birds!

Oh yes that is fine. I believe it is recommended 1 box for 3 hens...they double up anyway...some even triple up!
