The 'why not' is because chickens instinctively scratch and DIG. And I mean DIG!
Having wire under their feet risks injury.
Installing an 18-24" wide predator apron is extremely effective against digging predators and is much less labor intensive than digging a trench and burying wire.

The outer edges are pinned to the earth with HD landscape pins. You can just let the grass grow up through the wire.
A digging predators instincts tell them to go right up to the edge of the pen and start digging. They will hit the wire. They may back up and little and try again. They hit the wire.
