its not screwed but it is very difficult to try to pop it out

I'd just cut a 2x3 or 2x4 to width, and screw it in on top of the existing bar.

Have you checked the temperature at the level of the roost? Perhaps there is not enough ventilation and heat rises so it may be too hot and stuffy up there. Or maybe she is afraid of the other chicken?
