I keep a close eye, checking nests pretty frequently, every couple hours if not more often....am a retired homebody.
Because I'm excited to see what colors my new crosses will lay, and to get them used to my presence in the coop.
I find it interesting to watch their behaviors, unless the cacophony drives me back into the house..haha!
Also to grab any soft or thin shelled eggs(can be common with new layers) before they are broken.....
...and pullets can have a tendency to lay elsewhere than the nests, so I like to get those picked up quickly.
 
i had a hen that took a year to start laying, sometimes if the weather is bad it can take longer for them to start laying

as of today I am still getting 1 egg a day in the afternoon, they are small, I figure only 1 chicken is laying so far. Can I eat those small eggs ?, and how long does it take until they start getting large?

You can absolutely eat them!
It can take weeks, or months, for them to get larger...only time will tell.

The first egg was pretty big as you can see in the picture, and the eggs that followed that one are much smaller. I still am only getting 1 egg in the afternoon,
so I figure 1 chicken out of the 7 are laying. I'm looking forward to all of them laying.
